For clarity, I think Istalris meant that you don't have to touch the water or the plate with your hands in order to get it into the cup. That is, you don't pick up the plate and pour the water into the cup, and you don't use your hands to scoop the water into the cup. The lemon and the match, however, can still touch the water and the plate.
