Back in the day when I was working in a fish processing plant, an experience to be avoided, we had those different grades it basically comes down to the amount of attention the worker has given the product. A grade boneless, B grade boned, and C grade semi boned. The job title of Boner was kind of cool though. I know the leftovers for fish went to a glue factory if this happens to chickens or not I don't know.
