if you have a Debris Field, and a large defence, and your enemy or some one tries to take it, will get it or will your defence kill them ?

Debris field harvesting not only does not cause you to engage enemy fleet or defense, but it does not show as "activity" (denoted by a *) on the planet.

Nobody can see you doing it.

... without a moon. :|

It's one of the challenges of the game. Debris Fields are "shared property" and are owned by the first person to get their recyclers to the DF.

This also allows lower ranking players to get a reliable income of resources simply by owning recyclers.

If you had ships capable of defending your planet you wouldn't have a debris field in the first place. ;)

Besides, many attacks result in the loss of their entire fleet. They couldn't recover their debris field if they had to.

Secondly, recovering a debris filed is an important part of a fleet attack and therefor the game itself. It does no attacker any good to have a strong fleet if they can't profit on the defender's loss.

Attacking fleets and recyclers go hand in hand. They will forever be tied together and a necessary part of this type of game.

A moon is created instantly at the time of the attack. There is no accumulation of a debris field to eventually form a moon. It either happens all at once or not at all. So, leaving a debris field floating around your planet will do absolutely nothing towards gaining a moon.

If you don't care, why did you ask so many questions?

You're welcome anyway.
